Healthy Shakshuka Recipe
Ingredients (Serves 2):
- Fresh tomatoes — 3–4
- Bell pepper — 1
- Eggs — 3–4
- Onion — 1
- Garlic — 1–2 cloves
- Extra virgin olive oil — 1 tbsp
- Sweet paprika — 1 tsp
- Ground cumin — ½ tsp
- Salt & pepper — to taste
- Fresh parsley or cilantro — for garnish

Instructions:
- In a non-stick skillet, heat 1 tbsp of olive oil.
- Add chopped onion and sauté until soft (2–3 minutes).
- Add diced bell pepper and cook for 3–4 minutes.
- Add grated or chopped tomatoes, garlic, paprika, and cumin.
- Let it simmer for 10–12 minutes until it thickens slightly.
- Make small wells in the sauce and crack in the eggs.
- Cover and cook for 4–6 minutes, until whites are set but yolks remain runny.
- Garnish with herbs and serve warm.
