Healthy Shakshuka Recipe

Ingredients (Serves 2):

  • Fresh tomatoes — 3–4
  • Bell pepper — 1
  • Eggs — 3–4
  • Onion — 1
  • Garlic — 1–2 cloves
  • Extra virgin olive oil — 1 tbsp
  • Sweet paprika — 1 tsp
  • Ground cumin — ½ tsp
  • Salt & pepper — to taste
  • Fresh parsley or cilantro — for garnish

Instructions:

  1. In a non-stick skillet, heat 1 tbsp of olive oil.
  2. Add chopped onion and sauté until soft (2–3 minutes).
  3. Add diced bell pepper and cook for 3–4 minutes.
  4. Add grated or chopped tomatoes, garlic, paprika, and cumin.
  5. Let it simmer for 10–12 minutes until it thickens slightly.
  6. Make small wells in the sauce and crack in the eggs.
  7. Cover and cook for 4–6 minutes, until whites are set but yolks remain runny.
  8. Garnish with herbs and serve warm.
